Red Wine and Garlic Pâté
Red Wine marinade

This easy wine pâté by Winexpert Burlington is simply delicious! Even if you think you're not a big "liver person", you'll be amazed at how good it is!
1-1/2 Cups of chicken livers, rinsed and patted dry
1/2 Cup good quality butter (not margarine)
4 large garlic cloves, peeled, roughly chopped
1 Cup red wine
1/4 tsp. fresh ground black pepper
1 Tbsp. finely chopped chives
Using a medium pan on medium-high heat, sauté chicken livers in half of the butter, adding garlic and a little pepper. Sauté on quite a high heat until browned all over (about 2-3 minutes).
Add red wine and combine well, still on medium-high heat.
Simmer on medium-low until wine has reduced to about half (around 3-4 minutes - not allowing to burn!)
Add remaining butter and melt on low, then add chives.
Place mixture in a blender and blend until smooth, then put into small ramekins and refrigerate until cool. Enjoy!
