Strawberry Red Wine Popsicles

Beef wine stew 

It's always stew season when you have red wine... Delicious! HERE.

Finally a refreshing dessert for adults! Courtesy of yours truly, Winexpert Burlington. Perfect for making with our springtime strawberries in season... ENJOY!
  • 1-1/2 Cups of strawberries, hulled and quartered

  • 1 teaspoon balsamic vinegar

  • 2 Tablespoons maple syrup

  • 1 Tablespoon Chia seeds (for healthy + natural thickening)

  • 1/2 teaspoon of orange or lemon rind

  • 1 cup red wine – Cabernet Sauvignon is great



In a small pot, mix together the strawberries, balsamic vinegar, maple syrup, and bring to a simmer on medium-low mixing often until the strawberries have “mushed-up” a bit, approximately 5 minutes.


Remove from heat and add the Chia seeds, which will help thicken mixture as it cools. Immediately follow by adding orange or lemon rind, mix well and let stand until mixture is cooled to room temperature. Taste and adjust for sweetness preference, by adding more maple syrup if necessary. 


Place half of the mixture in a blender and blend until smooth, then add the red wine.


Spoon the remaining half of the strawberry mixture evenly into the popsicle molds, then top off with the blended strawberry + wine liquid mixture. 


Freeze popsicles for approximately 30 minutes before inserting popsicle sticks. Then freeze for a remaining 4-6 hours until completely frozen.
