Slow cooker beef + wine stew

Next time your belly screams, "I NEED SOME COMFORT FOOD!" check out this Winexpert Burlington recipe! Easy to make in the slow cooker, and it will be cooked through, juicy and tender in about 4 hours. Here's how:
 
 
 
Ingredients
  • 1-1/2 lbs. stewing beef (about 2 packages)
  • 1 medium onion, chopped rough
  • 2 celery sticks, chopped rough
  • 3 carrots, chopped rough
  • 6 potatoes, chopped to about 1" cubes
  • 4 cloves of garlic, minced
  • 2 cups beef broth
  • 1 cup of red wine
  • 2 Tbsp. dijon mustard
  • 1 Tbsp. soya sauce
  • 1 tsp. dried Italian seasonings mix
  • 1 Tbsp. brown sugar
 
 
Method
NOTE: It's always recommended to first flour and season the beef, then lightly sear in a pan until the beef is browned, BEFORE adding to the slow cooker. However, it's not imperative as the slow cooking process will ensure your meat is tender.
  1. Simply add all ingredients to your slow cooker and mix well to ensure all items are thoroughly coated with the sauces and spices
  2. It will not be completely covered with juices, but that's ok as the meats and veggies will release more juices as they cook
  3. Cook on HIGH for about 4 hours, mixing every hour to ensure a good coating. Do not open slow cooker for the last hour, to thoroughly steam and cook meat and potatoes through.
  4. After 4 hours, turn slow cooker to OFF setting, mix the stew well and adjust seasoning to taste.
  5. Serve on a bed of rice or pasta. Enjoy in comfort!
