Easy 10 minute clams in white wine sauce

Did you know there are over 12,000 varieties of clams around the world? So many clams, such delicious wine... so little time to experiment!
 
Obviously, at Winexpert Burlington we love wine. But we also love cooking up good food!  You can use all kinds of clams for this recipe, however, Cockles (the tiny, delicate, sweet ones) and Steamers (great with steamed dishes with butter) are best. Don't forget to wash them well before using! 
 
Here's what you'll need for this delicious quick meal:
  • 1 Tablespoon butter (please try not to use margarine for this dish! It's just not the same...)
  • 1 Tablespoon olive or grapeseed oil
  • 1 shallot, sliced
  • 3 cloves of garlic, finely chopped
  • pinch of salt, pinch of pepper
  •  
  • 1-1/2 lb. clams, cleaned well
  • 1/2 cup white wine
  • some fresh parsley for topping
 
 
Method
Heat butter and oil over medium, in a large pan or skillet. Add garlic and shallots and cook for about a minute, stirring often. Add salt and pepper.
Add clams, pour wine over top, COVER WELL and cook for about 8 minutes until the shells open. NO PEEKING! It's important to try and let them do their 'thing'... but occasionally you may shake the pan back and forth to allow for flavours to mix well, and steam be released inside the pan.
Once done, transfer to a large serving bowl and sprinkle with parsley. You may also serve over a fresh bowl of spaghetti with a bit of butter and grated cheese... YUM!

OPTIONAL: You may also sprinkle slightly with a touch of Parmesan cheese.
