Slow cooker fudge red wine cake

This recipe serves about 8 (or 4 very hungry-for-dessert people!) and it's so easy you will be floored when you taste it... sweet, moisty, and deliciously tainted with red wine... plus, it's easy to make using the slow cooker.
​
Here's what you'll need:
  • 1-3/4 cups flour

  • 3/4 cup unsweetened cocoa powder

  • 1 cup sugar (cane sugar is best)

  • 1/4 cup unsweetened apple sauce

  • 1/4 cup oil

  • 1-1/2 teaspoons baking soda

  • 1-1/2 teaspoons baking powder

  • 1 teaspoon salt

  • 2 eggs

  • 1 cup milk (we enjoy unsweetened almond milk)

  • 2 teaspoons vanilla extract

  •  
  • 1 cup boiling water

  • 1/4 cup red wine

And here's how to make it:

Grease the bottom and sides of the slow cooker with a bit of oil, using your fingers or a paper towel.

​

Mix all ingredients in a large bowl - wet first, then adding the dry - until well combined. 

​

Pour the cake batter into the slow cooker and immediately turn to LOW setting. Cover slow cooker.

​

Cook until the cake has slightly pulled away from the sides, and you can see there are no 'wet spots' to the cake - this will take approximately 2-1/2 to 3 hours, depending on the strength of the slow cooker.

Turn cooker off and remove lid, allowing to cool for about 20 minutes before serving with a dollop of ice cream. 

 

TIP ~ Add chopped pieces of salted nuts overtop.
