Winexpert Burlington Recipes: Garlic Spaghetti in White Wine Sauce
If you're still making the same spaghetti recipe, you know, the one that uses a can of sauce on top, you're missing out! This Winexpert Burlington pasta dish is easy and packed with flavour – perfect for busy parents!
1 package spaghetti (you can use gluten-free option too, you'll just have to rinse it out after cooking)
zest of 1 large lemon, keep the juice too!
2 Tbsp. olive or grapeseed oil
5 cloves of garlic, shaved super thin
1/4 red pepper, diced
1/2 tsp. red pepper flakes (optional)
1/3 Cup white wine
2 Tbsp. butter
salt & pepper to taste
a few fresh basil leaves
Cook your spaghetti as per package instructions. When draining, keep 1 Cup of the water!
In a large pan, cook up the garlic and lemon zest over medium-low until fragrant – do not burn the garlic as it will become bitter. Then add red peppers and flakes, cooking for about another 30 seconds.
Add lemon juice and white wine, and some of the pasta water, and butter, and cook until about half of the liquid has cooked off.
Add the pasta to the pan, mixing gently until well combined. Top off with Parmesan or Romano cheese if desired, and add a few basil leaves.
