Easy fish in a Red Wine Butter Sauce

Tight for time, but looking for an easy fish recipe to cook using your own your wine? Try this 15-minute recipe by Winexpert Burlington!
 
Here's what you'll need:
 
 
  • 1/3 to 1/2 lb. of fish per person (red snapper or salmon work great with this easy recipe!)
  • 1/2 litre of red wine
  • olive or grapeseed oil ​
  • 1/2 tsp dried thyme or a sprig of fresh
  • 1 bay leaf
  • small pinch of sugar
  • 1 tsp of mustard or 1/2 tsp of dried mustard
  • pinch of salt & pepper to taste
  • 2 Tbsp. butter or margarine

Method
This recipe works best if your fish is marinated in all the ingredients for about 1/2 hour before cooking. Otherwise:
 
Mix all ingredients excluding fish and butter, in a small bowl.
Dip your fresh fish in the bowl and place on medium-hot skillet, for about 1-2 minutes per side - don't overcook!
When fish is browned, add the butter and baste the fish with the sauce you've made.
Remove from skillet and allow to sit for a minute before serving. 
Serve with fresh asparagus – which can also be quickly poached in the pan after you finish cooking the fish.
