Here's what you'll need:
1/3 to 1/2 lb. of fish per person (red snapper or salmon work great with this easy recipe!)
1/2 litre of red wine
olive or grapeseed oil
1/2 tsp dried thyme or a sprig of fresh
1 bay leaf
small pinch of sugar
1 tsp of mustard or 1/2 tsp of dried mustard
pinch of salt & pepper to taste
2 Tbsp. butter or margarine
This recipe works best if your fish is marinated in all the ingredients for about 1/2 hour before cooking. Otherwise:
Mix all ingredients excluding fish and butter, in a small bowl.
Dip your fresh fish in the bowl and place on medium-hot skillet, for about 1-2 minutes per side - don't overcook!
When fish is browned, add the butter and baste the fish with the sauce you've made.
Remove from skillet and allow to sit for a minute before serving.
Serve with fresh asparagus – which can also be quickly poached in the pan after you finish cooking the fish.
