Quick 'Coq au Vin' recipe ~ with wine of course!
This easy Winexpert Burlington recipe replaces the possibly lengthy French cuisine "Coq au Vin" (chicken with wine) recipe, and makes it in half the time, with double the flavour!
Here's how to make your meal using your own wine, for a delicious and easy dinner or lunch treat:
2 Tablespoons of olive or grapeseed oil
1 package of cremini mushrooms
1/4 cup of garlic salad dressing (or you can easily make your own by combining sour cream with salt, pepper, and 3 minced garlic cloves)
1 cup of small onions, peeled and chopped to bite site
1 cup your Winexpert Burlington red wine (the bolder the better for this recipe!)
1/2 cup chicken broth
4 pieces of chicken (legs with backs, or breast, or a whole chicken, cooked and cut into pieces).
Using a large pan that has a lid, heat the oil over medium-high. Add the mushrooms and sauté for about three minutes, until slightly browned.
Add the chicken and brown slightly until all sides are browned. Then add the balance of the ingredients, mixing well until combined thoroughly.
Cover, reduce heat to low, and simmer for about 15-minutes, turning chicken halfway through cooking time.
