Lentil stew with oranges and red wine

Warm, hearty, super-tasty Winexpert Burlington Lentil Stew with Oranges! The oranges in our recipe brighten up the lentils, while the red wine screams 'YES!!'
 
Ingredients
  • 2 tablespoons olive or grapeseed oil (both very healthy choices!)

  • 4 ounces Spanish chorizo sausage, thinly sliced (you can ask for this type of sausage at the meats counter of your supermarket – it will be very worth it to include!)

  • 1 medium onion, peeled and finely chopped

  • 2 cloves garlic, peeled and finely chopped

  • 2-1/4 cups brown lentils, washed and drained (always best to boil lentils first, then drain the water, before starting the recipe... this will release much of the gas-forming 'foam')

  • 1 cup dry red wine, such as Pinot Noir (try our WinexpertBurlington variety!)

  • 2-1/2 cups chicken broth

  • 5 small oranges

  • 1 teaspoon kosher salt

  • 3/4 teaspoon freshly ground black pepper

 

Method

  • Heat the oil in a deep large pan over medium heat. Add the chorizo and cook for 5 minutes, stirring often to brown. Remove chorizo from pan.

  • Next, add the onion and sauté until soft (about 2 minutes). Add the garlic and stir well.

  • Now add your rinsed lentils and cook for 2 minutes, stirring constantly to prevent sticking.

  • Add the wine and simmer until almost evaporated, about 3 minutes, then add the broth and bring to a boil, reducing the heat to a simmer, partially covered. Cook for about 40 minutes stirring occasionally until the lentils are quite tender. 

  • Squeeze the juice from 2 of the oranges into the lentil mix along with the chorizo.

  • Peel and slice the balance of the oranges and carefully mix into the lentil dish. Serve as is or on a bed of white rice. Enjoy!
