At Winexpert Burlington we believe every season is chocolate season, especially when made with your own red wine!
​
These chocolate truffles are not that difficult to make, and since they're made with wine, their pair perfectly with wine too!
​
Here's what you'll need, and how to make them:
​
Ingredients
  • 8 ounces bittersweet chocolate

  • 1/2 cup of heavy cream

  • 4 Tablespoons of red wine (dry is best, but not completely necessary)

  • 2 teaspoons of icing sugar

  • 1/2 teaspoon of vanilla extract

  • 1/4 teaspoon of fine espresso powder (optional)

  • cocoa powder or icing sugar for dusting

Let's get started:

To begin, place the chopped chocolate in a large mixing bowl. Then heat the cream in a small pot over medium heat, mixing cautiously so it doesn't burn. Heat until just before boiling (do not boil!)

Remove pot from heat and add the wine, sugar, vanilla and espresso if using, and whisk to combine. Place back on the heat and continue whisking until the chocolate is melted and smooth - careful not to burn! 

​

Remove from heat again and cover with a lid, placing in refrigerator to set (about 1-1/2 hours). 

​

Line a baking sheet with parchment paper and dust with either cocoa powder or icing sugar (depending on whichever you're using).

 

Using a melon baller or a spoon, scoop to form about an 1-1/2" ball, rolling on the powder. 

​

Refrigerate the finished truffles for another 30 minutes to set, and then enjoy with a glass of wine!
