Red Wine and Caramelized Onion Marmalade

Wine marmalade for the party? OF COURSE!  This delicious wine marmalade by Winexpert Burlington is a sure crowd pleaser. Serve it on French bread or warm crostini* smothered with goat cheese. Great recipe for any leftover red wine!
 
It can also be given away as a gift... along with your a bottle of your own brew-on-premise wine of course!

Ingredients
  • 1 large onion​
  • 1 Tbsp butter
  • 2 Tbsp brown sugar
  • 1/3 cup Tamari sauce (natural soya sauce)
  • 1 tsp. lemon rind
  • 1/2 cup red wine

Method
Slice the onion in thinly. Add butter to a sauce pan and heat to medium, then add onions and stir occasionally for about 10 minutes until mostly browned.
Sprinkle brown sugar over onion butter and stir gently until well mixed. 
Add remaining ingredients and stir. Continue to cook over medium-LOW heat, stirring frequently until liquid has just about evaporated – about 10 more minutes. 
Taste for seasoning and add a bit of salt if necessary.
NOTE: Great with a bit of pepper to add that 'zing'!

*CROSTINI is a thinly sliced and toasted French bread. To make Crostini, heat oven to 350°F and lightly coat with oil. Bake for about 10 minutes until golden, flipping half way through.
