Mushroom White Wine Sauce

1 Tablespoon of butter
1 medium onion, diced
1 clove garlic, minced
1 small pack button mushrooms, thin sliced
1/2 cup dry white wine
1/2 cup cream (or 2% milk will do)
Salt & pepper to taste (a pinch of each)
Melt butter in a frying pan over medium heat. Add onion and garlic and simmer until onion is slightly translucent (don't let garlic brown or it will taste bitter).
Add garlic and sautee for a minute or two, until slightly softened.
Add wine and bring to a boil. Then immediately reduce heat to medium-low and add cream or milk. Simmer for another 5 minutes, stirring often to avoid burning.
Season to taste and pour over cooked protein or pasta.
