Strawberry Compote in sweet + tangy red wine syrup

Strawberries are always in season at Winexpert Burlington, especially when they are lightly made into a compote using red wine!

Red wine can be infused with herbs and spices, such as mint and cinnamon, in a jar on the window sill for 24 hours... Then the magic of making this delicious dessert can begin!

What you'll need: STEP ONE: Infuse your red wine for 24 hours:

  • 2 cups of red wine

  • fresh sprigs of mint

  • 1 cinnamon stick (or 1 star anise, clove, optional)

  • a small pinch of salt ( to help herbs and spices release their juices and flavour)

  • a mason jar with a lid

Combine all the ingredients in the mason jar, cover and place on a sunny window sill for 24 hours. The wine will be deliciously infused with some delicate flavours!

To make the dessert, you'll need:

  • Your infused red wine, strained

  • 1/2 Cup of sugar

  • 2 pints of fresh Ontario strawberries, rinsed and cut in half lengthwise

  • whipped cream, optional 

​

Bring all ingredients to a gentle boil, in a small sauce pan. Simmer uncovered over medium-low heat, for 15 minutes, stirring occasionally, until the mixture is slightly thickened and syrupy. 

​

Turn heat to low and add strawberries in the saucepan, mixing gently to combine with wine syrup. Immediately after combining, turn heat off and cover, allowing strawberries to soften for about 5 minutes. 

​

Serve and enjoy with whipped cream on top, or over ice cream. 

​
