This pear recipe is great as a dessert for your next party, family get together, or just to satisfy that craving for a dessert that won't pack the calories... YUM!

Ingredients
  • 4 medium pears (Bosc work great for this), carefully peeled with stem on
  • 1/2 lemon
  • 3 tsp. of brown sugar
  • 2 cups fresh raspberries (you can substitute for frozen if necessary)
  • 1 cup bold red wine

Method
Immediately after peeling pears, rub with lemon so as to prevent browning.

Arrange pears in a glass pie plate (about 8" in size) and add 2 Tbsp. water. Cook, uncovered, in microwave for about 5 minutes or until slightly fork-tender (if still too hard, cook for another minute until fork-tender).

Puree raspberries in a blender until smooth yet slightly chunky pieces still remain. Add sugar and wine, and puree for another 15 seconds until just mixed.

Place cooled pears and raspberry sauce carefully into a plastic zip bag to combine. Leave on counter for approximately 30 minutes, turning occasionally to coat all of the pear.

Serve cool or reheat in microwave to serve with a dollop of vanilla ice cream. Delicious!
