Low Carb Shrimp and Zucchini Stir-Fry with White Wine

This warm salad is the perfect dish to serve for a quick lunch, while getting all the nutrition you need to keep you going for the day... and it's low carb and loaded with healthy bites!
Ingredients for two servings:
1 Tbsp. of Grapeseed or Vegetable oil
1 lb. of fresh frozen shrimp (cooked will do fine as well)
2 cloves of garlic
1 zucchini, sliced in thin strips (julienne)
2 small tomatoes, sliced
2 Tbsp. red pepper
1 small hot pepper (red or green - optional)
1/2 carrot, peeled and sliced thin
1/2 Cup of white wine
salt and pepper to taste
a dash of soya sauce (or Tamari, the gluten-free option)
Here's how to make it:
In a large skillet add the oil and garlic, sauteing on low heat.
Turn heat up to medium and add shrimp, heat until slightly cooked through and shrimp turns pink in colour.
Add the veggies and continue to saute on medium heat. Then add wine and salt/pepper, and combine thoroughly.
Add a dash of soya sauce and serve immediately. Enjoy!
