The best Marinara sauce with wine!

Everyone loves pasta, but you really need to try making this easy Marinara sauce rather than buying a canned or jarred sauce at the store. It tastes way better, it's fresher, and will bring your pasta dish to life! In fact it's so good, you can even try it on freshly baked potatoes (try our wine potatoes too!)
10-12 fresh tomatoes (any kind will do, from beefsteak tomatoes to plum). If you want to skip this step, just buy 2 large cans of stewed tomatoes
1 small can of tomato paste
1/2 cup fresh parsley, chopped
2 cloves of garlic, minced
1 teaspoon of fresh oregano (or dried)
1/2 cup of onions, diced
1/2 white wine
1 tsp. salt
1/2 tsp. pepper
1/4 cup olive or grapeseed oil
Let's get it started!
To get your fresh tomatoes started, boil a large pot of water. Once boiling, drop tomatoes inside carefully, and turn boiling water off. Drain and rinse over cold water, then carefully peel tomatoes so the skin is off. Chop tomato core and then you're ready to go!
Heat a large pan with oil and place onions and garlic, cooking on medium until fragrant - don't allow garlic to burn or it will turn bitter!
Add the balance of the ingredients and mix well, simmering on low (uncovered) for about 20 minutes, mixing occasionally to avoid burning.
At this point if a smoother Marinara sauce is desired, remove from heat and pulse slightly in a food processor (careful not to do this when the sauce is too hot, otherwise burns can occur! Allow sauce to cool first). If you're doing this step, you may choose to adjust taste and seasoning after.
