Slow cooker stew with beef, veggies and wine

Which is the best season for beef, slow-cooked with wine and vegetables? ANY season! Especially when cooked with your Winexpert Burlington DIY wine. 
​
This recipe will stew using a slow cooker, for about 4-6 hours on low setting (or 3-4 hours on HIGH, but it may not result in the most tender beef). Cooked this way, the meat will be fork-tender and the taste is fragrant and satisfying. Perfectly hearty!
 
Ingredients you'll need:
  • 2 Tbsp. oil (olive or grapeseed are best)

  • One 2 lb. inexpensive cut of beef (round steak, blade, skirt, anything inexpensive will work!)

  • 1 small package of button or cremini mushrooms

  • 3 garlic cloves

  • handful of green onions

  • 1 red onion (or white will work too)

  • 3 large carrots, peeled and roughly chopped

  • 4 large yellow potatoes, skin-on and chopped in halves or quarters (large and chunky)

  • 1 cup of fresh parsley, chopped

  • 1 medium fennel bulb, roughly chopped

  • 1/2 small can of tomato paste

  • 2 Tbsp. of ketchup, or otherwise sugar

  • 3 to 4 sprigs of fresh thyme, whole

  • 1 heaping Tbsp. of fresh rosemary

  • 1-1/2 Cups of your Winexpert red wine

Ready? Here's how to make it:

We're often told it's necessary to sear the beef in a hot frying pan with hot oil, until all sides are browned, prior to slow-cooking. With this slow-cooker recipe, it's not necessary to do so. 

​

Simply add all your ingredients to the slow cooker, mix well, cover, and set on low. Allow the clow cooker to do its job and cook away, tenderizing your meat over time, heat, and steam.

Every hour for the first 2 hours, remove the lid and give all ingredients a good mix to ensure they're being covered in the juices.

​

Also check occasionally to ensure the liquids are simmering slowly and not overflowing. Depending on your style and brand of slow cooker, you may need to turn the slow cooker on 'warm' if it's bubbling too high. 

​

Once 4 hours have passed, you may turn the slow cooker OFF and keep the lid on for another hour to hour-and-a-half, until the meat has had time to rest and cool slightly.
