20 minute chicken & white wine sauce

Dinner couldn't be easier! This quick chicken & white wine recipe by Winexpert Burlington, will have dinner on the table in just about 20 minutes.
4 skinless, boneless chicken breast halves, cut into 3/4" thick strips or smaller chunks
2 eggs, beaten
1/2 Cup Parmesan cheese (or Romano)
1 pinch salt (use 1/2 pinch if using Romano cheese)
1 pinch ground black pepper
1 Cup button mushrooms
1 Cup white wine (yes you may use your leftover wine... if you dare to have any leftover!)
4 Tbsp. butter
Place the chicken strips into a bowl and add salt and pepper. On a separate dinner plate, spread the cheese.
Dip the chicken onto beaten eggs, then dredge with cheese and set aside.
In a pan, melt the butter over medium heat and cook chicken frequently until slightly browned, approximately 1 minute per side of strip. Add mushrooms and mix slightly until they're all slightly browned.
Reduce the heat to low, add the wine and cover. Simmer for approximately 15 minutes, stirring occasionally. Garnish with a sprig of cilantro or parsley (optional) and serve on white rice.
