Baked Chicken Thighs in Garlic White Wine Sauce

This easy Winexpert Burlington recipe is very tasty and made using your leftover white wine. It can be served over mashed potatoes or a beautiful white rice with some of the sauce on top to absorb the flavour of the juices.
 
Ingredients
  • 8 chicken thighs (skin on, bone in)
  • 1 Tbsp. olive or grapeseed oil + 1 Tbsp. butter

  • 3 garlic cloves, peeled and finely chopped

  • 250ml white wine

  • large handful of chopped, fresh mixed herbs like sage, parsley, thyme, whatever you have at hand

  • splash of unsweetened coconut milk or 2% milk

  • salt & pepper to taste

 
Method
  1. Pre-heat the oven to 400°F

  2. In a large, oven-proof frying pan, melt the oil and butter, then fry the chicken on medium heat until golden brown

  3. Remove chicken from the pan and lower temperature to medium/low; then add the garlic into the pan and allow to fry for a few seconds

  4. Pour in the wine, milk and chopped herbs, mix well

  5. Add the chicken back to the pan then season to taste with salt and pepper.

  6. Place in the oven for about 15-20 minutes until chicken is cooked through and still juicy. 

  7. Remove from oven and allow to stand for a few minutes before serving.
