Arriba Mojitos!  The refreshing flavour of the classic Mojito using the fruity aromas of Riesling makes this cool drink a hit!  Prepared by Winexpert Burlington.

Ingredients

• 1 bottle of Riesling-type white wine​

• 1 lemon, sliced 

• 1 cup of blackberries, slighly squashed with a potato masher until they "pop"

• mint leaves

• 1 litre of lemonade

• 1 cup sparkling soda water

• 1/4 cup brown sugar (for rimming glasses)

Method

Rim 4 mason-jar style glasses and dip in brown sugar, set aside

​

In each jar, place 3 or 4 mint leaves in a glass alongside 1 slice of lemon and squish with a wooden spoon until the mint leaves have slighly 'broken apart', this will release their flavour. Repeat for all jars.

In a separate glass pitcher, combine all other ingredients and mix well with a wooden spoon. Serve immediately with some ice.
